Wishing you all the best for the New Year
We all start off the New Year with good intentions to be fit, healthy and active. And that is a great resolution even if you find it hard to keep it up. At the practice, we aim to spend 2019 helping you do just that.
However, we also know that you have had a busy time over the Christmas and New Year season so we won't talk for too long this month except to give you a quick review of recent events.
As always, Toy Day was a massive success and we are very grateful that so many of you contributed to this special day. Our chosen charities, The Salvation Army and the Whitely Bay Food Bank, were as pleased as punch with the support and goodwill that winged it's way to them and those in need.
Our second – and newest – December event was The 12 Days of Christmas, which showcased many of our fabulous local businesses This was just as successful and a huge amount of fun. It's our turn to thank all the local (and not so local) businesses that donated a voucher or gift. We know that the winners were delighted and have really enjoyed them. Please continue to help our Tynemouth small businesses and those the country over. We need our high streets!
The ultimate kick-start dish for 2019...__
This Asian style stir-fry is egg, nut and wheat free and easy to adapt. Add more or different vegetables, extra spices and change the chicken to your favourite meat or fish – or it's perfect with left-over cold turkey!
INGREDIENTS
2 chicken breasts
1 tsp each black pepper and sea salt
2 tbsp coconut oil
1 onion, 1 red pepper, 1 clove of garlic
250 gms cauliflower and spinach
Juice of one lime, 1 small fresh chili, a small bunch of coriander
INSTRUCTIONS
Slice the chicken and rub with the salt and pepper. Heat the coconut oil until hot but not smoking then add the strips of chicken breast. Stir fry for about 2 minutes then add the chopped onion, garlic and red pepper, stirring frequently until the onion has softened. Add the remaining vegetables and cook for another 3 minutes before adding the lime juice and chilli for a final stir. Turn off the heat and add the chopped coriander just before serving.
